Walnuts are rich in substances, trace elements and vitamins that are useful and necessary for the life of the body. They contain: coratriterpenoids, steroids, alkaloids, vitamins C, PP, carotene, phenolcarboxylic acids, tannins, coumarins, flavonoids, anthocyanins, quinones and high aromatic carbohydrates, in the pericarp - organic acids, tannins, coumarins and quinones. Green nuts are rich in vitamins C, B1, B3 PP, carotene and quinones, mature nuts are rich in sitosterols, vitamins C, B1, B2 PP, carotene, tannins, quinones and essential oils, as well as fiber, iron and cobalt salts. Walnut kernels contain (in%): fat - 45.5-77.0, nitrogenous substances - 8.7-18.9, water - 3.3-5.7, nitrogen-free substances - 7.9-19.4, fiber - 2.5-7.6, ash substances - 1.4-2.3. Nuts are rich in vitamins, especially vitamin C, less - vitamins A and group B. Unripe nuts are exceptionally rich in vitamin C - from 1000 to 3000 mg per 100g.
